Gueritos Red Tacos is a food truck that was initially located in Tijuana, Mexico. Via Los Angeles, they are now in San Antonio. They officially opened in San Antonio on October 22 and have settled at the Alamo Fireworks located on FM-1560. From campus, the drive is approximately 10 minutes. Most known for their birria menu items, from birria tacos to birria quesadillas, they also have multiple different agua frescas flavors, such as watermelon, cucumber, and pineapple. The food prices on the menu are for each individual item purchased and are reasonable prices for the size of the items. For $2 each, the birria tacos come oozing with flavor and the dipping sauces make it even better. The quesa taco was good, but would taste better with sour cream. The burrito, costing $7, is clearly for the size instead of the taste. The beans were a bit bland and there was no cheese. Just like the quesataco, the burrito would’ve tasted much better with sour cream. Due to the fact that this food truck is pretty popular, lines can get extremely long. Depending on the time you get there, it could take an hour just to order your food. Address: 8701 FM1560, San Antonio, TX 78254
Eklectic Eats is a Puerto Rican food truck. The owner is a Puerto Rico native that moved to San Antonio in 2019 to share her love and passion for food with others. Located at the Alamo Fireworks on Potranco, the food truck is approximately a 17-minute drive from campus. If you’re new to Puerto Rican cuisine, they have a “Puerto Rico in a cup” option on the menu that has a little bit of everything. This contains mofongo (fried plantains), pernil (fried pork shoulder or leg), arroz con gandules (rice with pork and pigeon peas), pincho de pollo (chicken kabobs), tostones (twice-fried plantains). As someone who was raised around these dishes, this option on the menu is an excellent introduction to Puerto Rican cuisine. Sadly because the food is prepared ahead of time, the tostones are tough to chew. Address: 12157 Potranco Rd, San Antonio, TX 78253
Cajun Coffee Shack comes to the local area from a Seattle native who moved to San Antonio about 6 years ago and Brought the “espresso stand” concept with them. The prices are reasonable, specialty drinks do not cost an arm and a leg. They provide a large variety of unique flavors, such as Banana Cream Pie, Aloha Mocha, Snickers and Almond Joy. Two differences between Cajun Coffee Shack and the other two food trucks is that they provide a stamp card, and it has a drive-thru. Order 10 drinks, get your next order $3 off. Depending on how much you order, the final price will nearly be completely free. The customer employees are extremely nice and very welcoming. The banana taste in the Banana Cream Pie drink is so strong, it’s almost like eating an actual banana cream pie. The Aloha Mocha has a very unique taste, nearly unrecognizable. The summer-like drink contains white chocolate and coconut. For those who aren’t coffee fanatics, the coffee taste is not strong, and there are other options on the menu. For example, different flavors of Italian soda and granitas. Aside from the amazing staff and drinks, Cajun Coffee Shack gives back to the community through local fundraisers for veterans, local animal shelters and the San Antonio Food Bank. On top of that, veterans and first responders get a discount with a proper ID. Address: 11618 Potranco Rd, San Antonio, TX 78253
